Baked Mediterranean Summer Squash and Zuchinni Recipe

Delicious Mediterranean Baked Zucchini and Yellow Squash

I volunteer in a community organic garden and our weekly harvest included some beautiful squash. Squash dishes remind me of my grandmothers from the Mediterranean who cooked squash often when in season! This can be made with or without dairy.

3 to 5 pieces of a combination of washed and yellow or zucchini squash
1 teaspoon ground fennel powder
1 teaspoon of garlic powder
1 teaspoon of dried oregano
1 teaspoon of thyme
1 teaspoon of dried or 2 tablespoons of fresh minced mint
*Optional: 1/4 cup of Pecorino cheese (made from sheep’s milk)
and/or 5 teaspoons of ghee (clarified butter) or clean butter (hormone free and grass
fed dairy)

Cut the squash into quartered slices. Put spices on squash first and then drizzle with olive oil and if you wish add 5 teaspoons of dollops of clean butter or ghee .

Cook at 350 degrees for 30 minutes or more until squash is soft. Enjoy!
