Mediterranean Goddess Carrot-Cumin-Mint-Raisin Salad
Mediterranean Goddess Carrot-Cumin-Mint-Raisin Salad Recipe
(Great for a party, a potluck or anytime dish!)
Ingredients:
5 cups of grated carrots
½ cup of chopped fresh mint, remove stems
1 cup of raisins
Dressing:
8 tablespoons of extra virgin olive oil
½ cup of lemon juice
2 to 3 teaspoons of maple syrup or honey
½ teaspoon of sea or Himalayan salt according to taste
1 teaspoon of cumin or less according to taste
Use organic produce and raisins whenever possible for better health.
Instructions:
Clean and grate carrots by hand or with food processor. Place in bowl. Add chopped mint and raisins. Set aside. Mix dressing ingredients of extra virgin olive oil, lemon juice, maple syrup (or honey,) salt and cumin. Taste and adjust accordingly. Use whisk to mix. Pour over carrots, mint and raisin and toss. Refrigerate and Enjoy.
