When watermelon is in season this makes a delicious savory and sweet salad for yourself and/or to share with loved ones. So simple.


Ingredients:
Watermelon, remove seeds and cube or cut into about 2 inches
Feta cheese, cubed (preferably made from sheep’s milk or sheep/goat milk like made in Greece)
2 Tablespoons of Mint or Basil – cut into ribbons
1 medium Cucumber peeled and sliced into rounds
Juice from ½ Lemon or 1 Tablespoon of Lemon Juice
2 Tablespoons of Apple Cider Vinegar
2 Tablespoon of Extra Virgin Olive Oil
½ teaspoon of Sea Salt or salt to taste
Dried Greek Oregano or regular Oregano
Dried Basil, if not using fresh Basil
1 medium Red onion, sliced lengthwise
Optional – depending on sweetness of watermelon you can add 1 teaspoon of honey if watermelon not very ripe
Place Watermelon and Mint in a mixing bowl, add cucumber and onions and feta. Add lemon juice, apple cider vinegar, extra virgin olive oil, sea salt, oregano, basil or mint. Mix with mixing spoon. Before serving, let sit for 5 minutes, so seasonings soak into the watermelon. Enjoy.
*Whenever possible and available use whatever you can find organic, to avoid pesticides.
